Ingredients
All-purpose flour, for dusting
2 sheets frozen puff pastry (from 17.3-oz package), thawed
8 oz goat cheese, softened
2 teaspoons olive oil
4 teaspoons fresh lemon juice
1/2 teaspoon black pepper
4 ounces prosciutto , torn in thin strips
6 asparagus spears, trimmed and shaved
Directions
  1. Heat oven to 400°F. Lightly spread flour on rolling pin. Place puff pastry sheet on piece of cooking parchment paper; roll into 11x10-inch rectangle. Keep pastry on parchment, transfer to rimmed sheet pan. Score dough ½ inch from edge all the way around to make border. Poke dough all over with fork inside border. Bake 13 to 16 minutes or until golden brown. Press down center of pastry along border to flatten.
  2. Meanwhile, in medium bowl, mix goat cheese, 2 tablespoons of the olive oil, lemon juice and pepper. Dollop goat cheese mixture evenly over center of hot tart; let stand 1 minute. Gently spread cheese mixture to within ½ inch of edges.
  3. Top with prosciutto and asparagus. Drizzle with remaining olive oil and lemon juice if desired. Cut into 4 rows by 3 rows.
