Ingredients
4-6 Gorton’s Beer Battered Fillets
1 red bell pepper cut into strips
1 yellow bell pepper cut into strips
1 sweet onion sliced
1 tbsp of fajita seasoning for the fajitas and 1 tsp of fajita seasoning for dressing
1/2 tsp of salt for the fajitas and pinch of salt for the cabbage slaw
2 tablespoons olive oil
6 tortillas warmed
1/2 cup sour cream
2 tbsp of lime juice for the dressing and 2 tbsp of lime juice for the cabbage slaw
1 tablespoon or more hot sauce
2 cups of cabbage shredded
3 tablespoons of fresh cilantro
1/2 red onion sliced thinly
Directions
  1. Preheat oven at 425°F
  2. In a large bowl toss together peppers, onions, with olive oil, salt, and fajita seasoning.
  3. Transfer the vegetables on the half side of a baking dish. Place Gorton’s Beer Battered Fillets on the other half.
  4. Bake for 20-25 minutes.
  5. In the meantime, in a large bowl combine cabbage, red onion, and cilantro. Season with a pinch of salt, and lime juice. Toss to combine.
  6. Let it chill until ready for serving.
  7. In a small bowl combine ingredients for the dressing. Mix well.
  8. Remove the pan from the oven and build your tortillas with cabbage slaw, roasted vegetables, one Gorton’s Beer Battered Fillet and drizzle the spicy sauce. Squeeze more lime juice and sprinkle fresh cilantro per your taste.
