Ravioli Soup

Ingredients
2 tbsp olive oil
1 yellow onion, diced
¼ cup tomato paste
1 tbsp Italian seasoning
¾ tsp salt
½ tsp black pepper
1 bag Essential Everyday Frozen Italian Style Vegetables
6 cups Essential Everyday Fat Free Beef Broth
1 bag Essential Everyday Frozen Beef Ravioli
Grated parmesan cheese, for serving
Fresh parsley, for serving
Directions
- Heat oil in a large pot over medium heat. Add onion and sauté for 3-5 minutes.
- Add tomato paste, Italian seasoning, salt and pepper and stir well, cooking for 1-2 minutes.
- Add the frozen vegetables and broth. Bring to a boil, then reduce heat and simmer for 15 minutes, until vegetables are tender.
- Add the ravioli and continue cooking for 5 minutes.
- Serve hot with parmesan cheese and fresh parsley.
