Provolone Mushroom Chicken Skillet

Ingredients
3 chicken breasts
1 tablespoon Italian seasoning
Salt to taste
Pepper to taste
2 tablespoon olive oil, divided
3-4 garlic cloves, minced
8 oz. sliced mushrooms
1/2 cup chicken broth
1/2 cup milk
1/2 cup BelGioioso Parmesan cheese, shredded
3 slices BelGioioso Provolone cheese
Fresh parsley, chopped to garnish
Directions
- Season chicken breasts with Italian seasoning, salt and pepper. Add 1 tablespoon of olive oil onto skillet and cook the chicken over medium heat for 4-5 minutes on each side. Remove chicken from skillet and place on plate and cover.
- In the same skillet, add the other tablespoon of olive oil and minced garlic. Cook for 1 minute over medium heat. Add mushrooms, toss and cook for an additional 3-4 minutes.
- Add chicken broth, milk, and BelGioioso Parmesan. Mix and allow to simmer for another 2 minutes. Add the chicken back into the skillet. Allow it to simmer for 5 minutes under low heat with the creamy mushroom sauce mix.
- Top each chicken breast with one slice of BelGioioso Provolone. Place in a 350˚F oven and bake for 5-10 minutes or until the cheese has melted. Garnish with fresh parsley and more Parmesan if desired.
