Plumcot Mint Mojitos

Plumcot Mint Mojitos

Ingredients
1 medium plumcot
4 teaspoons granulated sugar, plus more if needed
8 mint leaves, plus more for garnish
4 oz light rum
3/4 oz fresh lime juice
1 cup club soda

Directions
- Cut a thin slice off two sides of 1 plumcot, cut a slit halfway through each slice and set aside for garnish. Chop the remaining plumcot.
- In a small pitcher, muddle 4 tsp granulated sugar, 8 mint leaves and chopped plumcot until pulverized. Add 4 oz rum and ¾ oz fresh lime juice and stir. Strain into glasses. Add ice and top with ½ cup club soda, each. Garnish with plumcot slice, mint leaves, and a lime wedge.
