Pimento Cream Cheese Frittata

Ingredients
1 block cream cheese (8 oz)
2 tablespoons butter
1 cup shredded cheddar cheese
1/4 cup diced pimentos
1 teaspoon Worcestershire sauce
1/4 teaspoon ground red pepper
6 eggs
1/3 cup milk
4 green onions
2 cups frozen shredded hash browns
6 slices bacon, cooked
Directions
- Heat oven to 350ºF. Thaw frozen shredded Hash Browns.
- Line 8-inch square pan with parchment or foil; spray with cooking spray.
- Soften cream cheese by placing completely unwrapped package in microwaveable bowl. Microwave on HIGH for 10 seconds. Drain diced pimentos. Mix Philadelphia cream cheese, shredded cheddar cheese, diced pimentos, Worcestershire sauce, and ground red pepper until blended.
- Spoon 1/2 cup of the cream cheese mixture into large bowl; set aside.
- Slice green onions and set aside. Whisk eggs and milk until blended. Add to 1/2 cup cream cheese mixture; mix well. Stir in green onions.
- Melt butter in medium skillet over medium heat. Add hash browns; stir. Cook 5 min. or hash browns are lightly browned, stirring occasionally. Add to egg mixture; mix well. Pour into prepared pan.
- Meanwhile, cut the bacon into 1-inch-thick slices.
- Drop tablespoonfuls of the remaining cream cheese mixture over hash brown mixture; top with bacon.
- Bake 25 to 30 min. or until knife inserted into center of frittata comes out clean.
