Parmesan-Roasted Pumpkin Seed Mix

Ingredients
1 1/2 cup pumpkin seeds
2 tablespoons olive oil
5 oz (1 cup) Sartori Parmesan, grated
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup unsweetened coconut flakes
1 cup dark chocolate chunks
3/4 cup dried cranberries
Directions
- Heat oven to 300°F. Add pumpkin seeds to a greased 15x10-inch baking pan. Drizzle with olive oil, sprinkle with parmesan, salt and pepper, and toss to coat. Bake 10–12 minutes or until light brown. Cool completely on a wire rack.
- In a large bowl, combine pumpkin seeds and remaining ingredients.
