Mix & Match Baked Mac and Cheese

Ingredients
1 pound pasta (any shape!)
5 cups milk
5 tablespoons butter
6 tablespoons flour
2 cups Crystal Farms grated extra-sharp cheddar
2 cups Crystal Farms Monterey Jack
1 cup chopped bacon
1 cup chopped blanched broccoli
1/2 cup bread crumbs
Directions
- Cook 1 pound pasta, then drain. Meanwhile, heat oven to 450°F
- Heat 5 cups milk in a saucepan. In a separate saucepan, melt 5 tablespoons butter over medium heat. Whisk in 6 tablespoons flour and cook, stirring, about 1 minute (do not let flour brown). Slowly whisk in hot milk, then bring to a simmer and cook 5 minutes. Season with salt, pepper and nutmeg pour into a bowl.
- Add the hot cooked pasta to the sauce and mix in 1 pound grated cheese (4 cups) until melted.
- Mix in bacon and broccoli.
- Spread pasta in a buttered 3 or 4 quart baking dish, top with breadcrumbs or panko, uncovered, until browned, about 15 minutes.
