Mini Cornbread Stratas

Ingredients
PAM No-Stick Cooking Spray
1 can (14.5 oz) Hunt's Petite Diced Tomatoes
5 large eggs
1/2 cup half-and-half
5 cups cornbread
1 cup asparagus
3/4 cup ham, finely diced
2/3 cup Swiss cheese, shredded
Directions
- Preheat oven to 350°F. Coat 12 standard-size muffin cups with cooking spray.
- Prepare ingredients: drain tomatoes well in strainer, pressing to release liquid. Cut cornbread into small cubes and asparagus into 1-inch pieces. Finely dice ¾ cup Swiss cheese.
- In a large bowl, whisk together eggs, half-and-half and salt and pepper to taste. Add tomatoes, cornbread, asparagus, and ham; stir to combine, pressing gently to help cornbread absorb egg mixture. Spoon into muffin cups and top with cheese.
- Bake 20-25 minutes, or until golden brown and knife inserted in middle comes out clean. Once cool, loosen from sides of muffin cups with a thin knife.
