Kale Caesar Salad with Popcorn Shrimp

3 cups kale, thinly sliced
2 sweet potatoes cubed
8 oz Gorton’s popcorn shrimp
1 tbsp pepitas
Shaved parmesan cheese for serving
2 tbsp olive oil
Salt, to taste
Black pepper, to taste
1 tbsp Dijon mustard
1 tbsp mayonnaise
1 garlic clove
1-2 anchovy fillet
1/4 cup grated Parmesan cheese
Juice from 1 lemon
1/3 cup olive oil
Directions
- Preheat oven at 425F degrees.
- In a bowl toss the sweet potatoes with olive oil salt and black pepper.
- In baking sheet add sweet potatoes in one side and the popcorn shrimps on the other.
- Bake for 20 minutes.
- In a food processor add all ingredients for the dressing. Blend until smooth!
- In a large bowl add the kale and sweet potatoes. Pour half of the dressing and combine gently.
- Top the salad with popcorn shrimps, pepitas and the rest of the dressing
