Cajun Chicken Alfredo

Ingredients
1 tablespoon olive oil
1 large red bell pepper, seeded and cut into 2-inch long strips (about 2 cups)
3 cloves garlic, cut into very thin slices
1 1/2 tablespoons Cajun seasoning
4 cups Swanson® Natural Goodness® Chicken Broth
1 1/2 cups water
1 pound uncooked penne pasta
1 can (12.5 ounces) Swanson® Premium White Chicken Breast in Water, drained
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Directions
- Heat the oil in a 6-quart saucepot over medium-high heat. Add the pepper, garlic and Cajun seasoning and cook for 2 minutes, stirring occasionally.
- Stir in the broth, water and uncooked penne and heat to boil. Reduce the heat to medium. Cook for 15 minutes or until the penne is tender, stirring occasionally. Remove the saucepot from the heat.
- Stir in the chicken, cream and cheese. Cover and let stand for 5 minutes. Season to taste. Stir in chopped fresh parsley just before serving. Serve with additional cheese, if desired.
