Bacon and Egg Muffins

6 eggs
1/4 cup heavy cream
Salt, to taste
Freshly ground pepper, to taste
8 slices bacon
1/2 cup shredded sharp Cheddar cheese
Chopped fresh chives
Directions
- Heat oven to 350°F. Grease 24 cups in mini muffin pan. Make bacon per package directions. In medium bowl, whisk eggs, cream, salt and pepper until well combined.
- Chop bacon slices into ½-inch pieces. Divide among muffin cups. Sprinkle with cheese. Divide egg mixture between cups. Bake 20 minutes or until set. Sprinkle with chives.
