Wonton Bok Choy Soup

Ingredients
6 cups low-sodium chicken broth
3 garlic cloves, smashed
4 slices (1/4-inch thick each) fresh ginger
16 frozen potstickers
2 baby bok choy, quartered lengthwise
1 tbsp soy sauce
Directions
- In a medium saucepan, combine chicken broth, garlic and ginger. Bring to a boil over medium heat. Reduce to low and simmer for 10 minutes. Remove garlic and ginger.
- Add potstickers and continue to cook another 1- 2 minutes, just until they float. Add the bok choy and soy sauce, and cook for another 2-3 minutes or until the potstickers are cooked through. Ladle into bowls and serve.
