Wild Rice Pilaf with Cranberries and Pecans

Ingredients
4 tablespoons butter
1 cup chopped onion
1/2 cup chopped celery
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
4 cloves garlic, minced
1 1/4 cups uncooked wild rice
4 cups chicken broth
1/2 cup pecans, toasted and chopped
1/3 cup sweetened dried cranberries
2 tablespoons sage, chopped
Directions
- In 3-quart saucepan, melt butter over medium-high heat. Cook onion, celery, salt, and pepper in butter 5–7 minutes, until onion is tender and translucent. Add garlic and cook, stirring, 30 seconds. Add wild rice; cook and stir 1 minute.
- Stir in broth. Heat to boiling; reduce heat to medium-low. Cover and simmer 1 hour 15 minutes to 1 hour 30 minutes, or until rice is tender and most of liquid is absorbed. Stir in pecans, cranberries, and sage.
Tip:
Unlike white rice, true wild rice will still have a little bit of texture even when fully cooked. For more tender wild rice, add 1 cup water and continue to simmer 30 minutes longer before stirring in the pecans, cranberries, and sage.
