Tzatziki Shrimp Cucumber Bites with Gorton’s Butterfly Shrimp

Ingredients
1 package Gorton’s Butterfly Shrimp
1 large cucumber
Fresh dill for garnish
Salt to taste
Pepper to taste
1 cup Greek yogurt
1 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Directions
- Prepare the Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and chopped dill. Mix well until all ingredients are thoroughly combined. Add salt and pepper to taste, then stir again. Cover the bowl and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld together.
- Cook the shrimp according to the package instructions. Let them cool slightly.
- Wash and slice the cucumber into 1/4-inch thick rounds. Lightly sprinkle with salt and pepper.
- Place a shrimp on each cucumber slice and top with a dollop of tzatziki sauce. Garnish with fresh dill if desired.
