Spinach Artichoke Chicken & Pasta

Spinach Artichoke Chicken & Pasta

Ingredients
2 lbs boneless, skinless chicken breasts
2 Tbsp olive oil
2 boxes (8 oz) frozen artichoke hearts, thawed
3 cups water
1 cup low-fat milk
1 pkg Knorr® Creamy Garlic Fusilli Family Pack
3 oz cream cheese, room temperature
1 pkg (5 oz) baby spinach leaves
1/4 cup chopped sun-dried tomatoes packed in oil
Parmesan for serving, if desired
Directions
- Cut chicken into bite-size pieces and season with salt and pepper. Chop artichokes and set aside. Heat oil in large nonstick skillet over medium-high heat and cook in batches, stirring occasionally, about 6 minutes. Remove and set aside.
- Add artichokes to same skillet and cook, stirring occasionally, until browned, about 4 minutes. Remove and set aside.
- Stir water, milk, Knorr® Creamy Garlic Fusilli Family Pack and cream cheese into same skillet and bring to a boil. Cover, reduce heat and cook, stirring occasionally, until pasta is tender (about 10 minutes). Stir in spinach until wilted. Add chicken, artichoke hearts, sun-dried tomatoes and combine. Serve with grated Parmesan.
