Ingredients
3 lb medium carrots, peeled and cut on the diagonal into 3-inch pieces
1/4 cup butter, cut into pieces
1/2 cup (packed) light brown sugar
1/4 cup pure maple syrup
2 tbsp, plus 2 tsp bourbon
1/4 tsp salt
Directions
- Preheat oven to 425°. Line a large, rimmed baking sheet with foil and spray with cooking spray.
- In a small saucepan over medium heat, combine butter, brown sugar, syrup, and salt. Bring to a boil and cook, stirring frequently, 2 to 3 minutes, until slightly thickened. Remove from heat and let sit for 10 minutes. Stir in 2 tablespoons bourbon.
- Place carrots in a large bowl. Drizzle in the maple syrup mixture and toss to coat. Arrange carrots in a single layer on the prepared baking sheet.
- Bake, stirring every 15 minutes, until tender and browned around the edges, 30–40 minutes. Sprinkle remaining 2 teaspoons bourbon over carrots and stir. Transfer to a platter and serve.
Tip: Adding a little extra bourbon to the carrots after they’ve been roasted, boosts the bourbon flavor just a bit. If you prefer a milder bourbon flavor, feel free to omit this step.
