Greek Salad with Fish Fillets for One

Ingredients
1 cup cucumber
3/4 cup cherry tomatoes, sliced
1/3 cup red onion, sliced
2 tbsp kalamata olives
1 tbsp feta cheese
2 Gorton's Fish Fillets
1/4 cup tzatziki sauce
1/2 tbsp extra virgin olive oil
1/2 tbsp lemon juice
1/2 tbsp vinegar
1/6 garlic powder
1/8 tsp oregano
Lemon zest
Directions
- Add cucumber, tomato, onion, and olives to a bowl.
- In a small bowl, whisk together dressing ingredients.
- Pour dressing over veggies and lightly combine.
- Top with cooked fish, feta, and tzatziki sauce.
