Fresh Fruit Pastry Cups

Ingredients
2 packages frozen puff pastry shells (10 ounce)
1 package instant vanilla pudding & pie filling (3.4 ounce)
2 cups whipping cream
2 tablespoons raspberry flavored liqueur, optional
1 fresh yellow peach pitted, chopped
1 fresh yellow nectarine pitted, chopped
1 fresh apricot pitted, chopped
1/4 cup apricot preserves
1 teaspoon minced fresh mint leaves
Directions
- Prepare pastry shells according to package directions. Cool completely.
- In large bowl, combine pudding mix, whipping cream and liqueur. Beat 1 minute at medium speed with an electric mixer. Divide pudding among pastry cups.
- Place preserves in a small microwaveable bowl. Microwave (HIGH) 30 seconds. Stir in chopped fruit and minced mint. Divide among pastry cups.
- Refrigerate 30 minutes before serving. Garnish with additional mint leaves, if desired.
