Creamy Roasted Garlic Mashed Potatoes with Bacon

4 slices bacon, cooked and chopped
1 block cream cheese (8 oz)
1 garlic head
2 lbs Yukon Gold potatoes, peeled and cubed
2 tablespoons whole milk
1/4 cup Italian parsley
1 teaspoon granulated chicken bouillon
1 tablespoon extra virgin olive oil
Directions
- Heat oven to 375°F.
- Cut a 1/4-inch thick slice off the top of the garlic head to expose tops of cloves. Place garlic cut-side up on a sheet of aluminum foil, then drizzle with oil. Wrap in foil and place in a shallow pan.
- Roast for 45 minutes or until garlic is tender. Remove from oven and cool slightly.
- Meanwhile, cook potatoes in a large saucepan of boiling water for 20 minutes until tender; drain and return potatoes to pan.
- Squeeze garlic head to remove roasted garlic cloves. Add to the potatoes along with Philadelphia® cream cheese, milk, parsley, and bouillon.
- Beat mixture with a mixer until desired consistency. Top with Oscar Mayer™ bacon.
