Butternut Squash Baked Pasta

Ingredients
1 lb Essential Everyday rotini pasta, cooked according to package directions
3 tablespoons Essential Everyday olive oil
1 cup diced yellow onion
2 teaspoons garlic, minced
4 cups cubed butternut squash
1 teaspoon Essential Everyday Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
2 cups Essential Everyday chicken broth
2 tablespoons Essential Everyday all purpose flour
2 cups Essential Everyday shredded mozzarella cheese, divided
1/2 cup Essential Everyday grated or shredded parmesan cheese
Directions
- Preheat oven to 350˚F and cook pasta according to package directions.
- Heat olive oil in a large skillet over medium heat. Add in the onion and sauté for 4-5 minutes, then add in the garlic, butternut squash, italian seasoning, salt and pepper and sauté for 15 minutes, until the squash is fork tender.
- Add the squash mixture to a blender with the chicken broth and flour and blend until completely smooth. Add the cooked pasta to the skillet along with the sauce and 1 cup of mozzarella. Stir to combine, then top with remaining cheese.
- Bake for 25 minutes, until the cheese is melted and golden brown.
