Rainbow Crepe Cake

Ingredients
2 pkgs original egglife egg white wraps
16 oz mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar substitute
2 teaspoon vanilla extract
food coloring
Directions
- Whip together mascarpone, heavy cream, powdered sugar, and vanilla and divide equally into seven bowls. Add food coloring and stir to achieve desired hues.
- Start with one egg white wrap on a plate or cake stand and spread half the purple frosting.
- Lay on a second wrap and spread with remaining purple frosting. Repeat with each color in reverse ROY G BIV order so you end with red on top.
- Chill for 30 minutes before serving.
