Gingerbread Blossom Cookies

Ingredients
3/4 cup butter, softened
1 cup sugar
1/2 cup light brown sugar
2 eggs
2 teaspoons vanilla
6 tablespoons molasses
3 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ginger
1/4 teaspoon cinnamon
Directions
- In a bowl with a mixer, beat 3⁄4 cup softened butter, 1 cup sugar, and 1⁄2 cup light brown sugar on medium speed until fluffy. Add 2 eggs and 2 teaspoons vanilla; beat, scraping sides of bowl until fully combined.
- Mix 6 tablespoons molasses into butter mixture. Whisk 3 3/4 cups flour, 1 teaspoon each baking soda and kosher salt, 1⁄2 teaspoon ginger, and 1⁄4 teaspoon cinnamon in a bowl; add to the butter mixture and beat until just combined.
- Heat oven to 350°F. Scoop rounded tablespoons of dough and roll into balls. Toss each ball into 1⁄2 cup coating of your choice (see tips) Arrange on parchment-lined baking sheets about 2 inches apart. Bake until the cookies are golden on the bottom, 8–10 minutes.
- While they bake, unwrap the Hershey's candies of your choice (see tips for ideas). When the cookies are done baking, remove from oven and immediately press a Hershey's candy into the center of each cookie. Transfer cookies to a cooling rack and repeat with remaining dough.
