Cheesy Chicken Fiesta

Ingredients
1 pound boneless, skinless chicken thighs
1 can (15 ounces) black beans
1 can (8.5 ounces) corn kernels
1 package Knorr Rice Sides, Chicken flavor
1/3 cup shredded cheddar cheese
2 large tomatoes, chopped
Directions
- Heat oil in large skillet over high. Cut chicken thighs into bite-sized pieces.
- Add chicken to skillet and cook 3 minutes. Rinse and drain beans and corn; add to skillet with 2 cups water and Knorr Chicken flavor Rice. Bring to a boil.
- Cover and boil 7 minutes or until rice is tender and chicken is thoroughly cooked. Serve topped with cheese, tomatoes, and sour cream, if desired.
