2 lb pork tenderloin

Directions
  1. Pre-heat your grill with 2 zones — 1 high heat and 1 low. Remove pork tenderloin from package and pat dry. Then brush with olive oil and salt and pepper. Place the pork tenderloin on the hot side of the grill and sear on all sides. Turn it every minute or so to create grill marks. Then move the tenderloin to the low-heat side of the grill and close the cover, cooking over indirect heat for 20-45 minutes until the internal temp of the pork is between 145-160°F.
  2. Remove from grill and brush with apricot jam and sprinkle with fresh rosemary pieces. Then let the tenderloin rest for 10-15 minutes before slicing.
