Smoky Black Bean Queso

Ingredients
16 oz melting cheese
1 can (10 oz) diced tomatoes
8 oz turkey bacon
2 tbsp finely chopped chipotle chiles in adobo
1 cup black beans
1/4 cup green onion
1/4 cup fresh tomatoes
Directions
- Cut Velveeta into ½-inch cubes and set aside.
- Prepare bacon in a skillet over medium-low heat. Crumble and set aside. While bacon cooks, prepare chipotle chiles and garnishes: finely chop green onions and chipotle chiles, dice fresh tomatoes; set all aside.
- Rinse and drain black beans.
- Combine Velveeta and undrained tomatoes in the same skillet. Cook over medium heat, stirring, until melted completely, 4-6 minutes.
- Stir in bacon, beans, and chipotle chiles. Cook, stirring until hot, 1-2 minutes.
- Top with green onions and fresh tomatoes.
