Ingredients
3 chicken breasts
1 tablespoon Italian seasoning
Salt to taste
Pepper to taste
2 tablespoon olive oil, divided
3-4 garlic cloves, minced
8 oz. sliced mushrooms
1/2 cup chicken broth
1/2 cup milk
1/2 cup BelGioioso Parmesan cheese, shredded
3 slices BelGioioso Provolone cheese
Fresh parsley, chopped to garnish
Directions
  1. Season chicken breasts with Italian seasoning, salt and pepper. Add 1 tablespoon of olive oil onto skillet and cook the chicken over medium heat for 4-5 minutes on each side. Remove chicken from skillet and place on plate and cover.
  2. In the same skillet, add the other tablespoon of olive oil and minced garlic. Cook for 1 minute over medium heat. Add mushrooms, toss and cook for an additional 3-4 minutes.
  3. Add chicken broth, milk, and BelGioioso Parmesan. Mix and allow to simmer for another 2 minutes. Add the chicken back into the skillet. Allow it to simmer for 5 minutes under low heat with the creamy mushroom sauce mix.
  4. Top each chicken breast with one slice of BelGioioso Provolone. Place in a 350˚F oven and bake for 5-10 minutes or until the cheese has melted. Garnish with fresh parsley and more Parmesan if desired.
