Cheesy Corn Casserole

Ingredients
2 tablespoons Essential Everyday unsalted butter
1 tablespoon Essential Everyday sliced jalapenos, chopped
2 cloves garlic, chopped
4 cans Essential Everyday sweet corn, drained
1-8 ounce package Essential Everyday cream cheese
8 ounces white cheddar cheese, shredded
1/2 cup Essential Everyday breadcrumbs
1/2 cup Essential Everyday shredded parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh tarragon, chopped
2 teaspoons salt
1 teaspoon pepper
Directions
- Preheat oven to 350 degrees.
- In a large saute pan over medium heat, melt butter. Add garlic and jalapeños and saute until fragrant, about 3-4 minutes.
- Add drained sweet corn, cream cheese and cheddar cheese. Cook for 3-4 minutes, until cheese is melted and incorporated. Season with salt and pepper.
- Pour mixture into a 9x9 baking pan.
- In a small mixing bowl, combine breadcrumbs, Parmesan cheese, parsley and tarragon.
- Pour an even layer of the breadcrumb mixture on top of the corn mix. Bake until topping is golden brown, about 10-12 minutes.
