Slow Cooker Chicken Tortilla Soup

Ingredients
3 boneless skinless chicken breasts
1 tablespoon Essential Everyday chili powder
2 teaspoons Essential Everyday cumin
1 yellow onion, sliced thin
1 red bell pepper, small dice
1 yellow bell pepper, small dice
1 – 29oz can Essential Everyday tomato sauce
1 – 14.5oz can Essential Everyday diced tomatoes with green chilies
2.5 cups Essential Everyday chicken broth
2-3 whole chipotle peppers in adobo
1 – 15oz can Essential Everyday black beans, drained and rinsed
1 tablespoon Essential Everyday lime juice
Directions
- Place the chicken breasts in the bottom of a slow cooker. Add the remaining ingredients except for the lime juice.
- Cook on high for 5-5 ½ hours on high (7-71/2 hours on low). Using tongs, shred the chicken breasts into chunks. Season the soup with the lime juice and additional salt and pepper if needed.
- Top with your choice of toppings.
