



1. Heat oven to 350°F. Coat 8x4-inch pan with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add onion and salt; cook, stirring frequently, 5 to 7 minutes or until edges of onion slices are browned and soft. Add 1/3 cup beef broth and bring to a boil. Cook 1 to 3 minutes, until reduced. 2. In large bowl, mix beef, eggs, breadcrumbs, 1/3 broth and Parmesan cheese well; stir in half (about 1/3 cup) of onion mixture. Press mixture prepared pan. Bake 40 minutes. 3. Remove from oven. Spread remaining onion mixture evenly over top, then top with Swiss cheese. Bake an additional 13 to 17 minutes or until center of loaf reads 165°F. Cover with foil. Let stand 10 minutes. Top with parsley before serving.
