Roasted Green Beans with Walnuts, Lemon, and Cranberries

Ingredients
1 3/4 lbs green beans, trimmed
1/2 cup sliced shallots
2 tablespoons olive oil
1/2 teaspoon finely grated lemon zest
1/2 cup walnut pieces
1/3 cup dried cranberries
1/4 cup water
2 tablespoons lemon juice
1/4 cup Italian parsley
Directions
- Heat oven to 400°F. Combine green beans with shallots, oil, and lemon zest on large, rimmed baking sheet; toss to combine. Spread beans into single layer; add salt and pepper to taste. Roast until just beginning to brown, about 10 minutes.
- Stir beans; sprinkle with walnuts and cranberries. Continue to roast until beans are just tender, about 6 minutes.
- Add water and lemon juice and continue roasting until liquid evaporates and the beans are lightly glazed, about 4 minutes. Garnish with parsley.
