B.L.A.T. Chicken Salad Lettuce Wraps

Ingredients
1 whole prepared rotisserie chicken
⅓ cup Mayonnaise
8 slices cooked bacon, chopped and divided
1½ tablespoons Wild HarvestⓇ Organic Chopped Chives, divided
1 tablespoon Wild HarvestⓇ Organic Chopped Parsley
1 small sprig Wild HarvestⓇ Organic Rosemary, leaves removed and finely chopped
1 cup Wild HarvestⓇ grape tomatoes, halved
1 avocado, pitted and diced
½ teaspoon fine sea salt
½ teaspoon black pepper
16 Wild HarvestⓇ Romaine Lettuce leaves
Directions
- Remove the breasts from the chicken and reserve the rest for another use. Dice the breasts into ½” pieces, transfer to a large bowl, and stir in mayonnaise.
- To the bowl add half the chopped bacon, 1 tablespoon chives, parsley, rosemary, tomatoes, avocado, salt, and pepper. Gently stir to combine.
- For each serving, place 2 lettuce leaves on top of each other. Divide chicken salad among lettuce cups. Top with remaining chopped bacon and remaining ½ tablespoon chives.
