Ingredients
2 pkgs original egglife egg white wraps
16 oz mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar substitute
2 teaspoon vanilla extract
food coloring
Directions
  1. Whip together mascarpone, heavy cream, powdered sugar, and vanilla and divide equally into seven bowls. Add food coloring and stir to achieve desired hues.
  2. Start with one egg white wrap on a plate or cake stand and spread half the purple frosting.
  3. Lay on a second wrap and spread with remaining purple frosting. Repeat with each color in reverse ROY G BIV order so you end with red on top.
  4. Chill for 30 minutes before serving.
