Ingredients
1 boneless pork tenderloin
4 slices swiss cheese
8 slices thin deli ham
4 soft hoagie rolls
3 tablespoons mustard
3 tablespoons mayonnaise
Pickles
Directions
- First grill the pork tenderloin by pre-heating your grill with 2 zones — 1 high heat and 1 low. Remove pork tenderloin from package and pat dry. Then brush with olive oil and salt and pepper. Place the pork tenderloin on the hot side of the grill and sear on all sides. Turn it every minute or so to create grill marks. Then move the tenderloin to the low-heat side of the grill and close the cover, cooking over indirect heat for 20-45 minutes until the internal temp of the pork is between 145-160°F.
- Remove from grill and let the tenderloin rest for 10-15 minutes before slicing. While the meat rests, arrange the rest of the Cubano Sandwich ingredients on hoagie buns - layers of Swiss cheese, pickles, sliced ham, mustard and mayo. Top with pork tenderloin and serve.
