Winter Salad with Maple Mustard Dressing

1/4 cup maple syrup
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1/4.teaspoon garlic powder
1/2 cup vegetable oil
1 pkg (10 oz) baby spinach
2 oranges, peeled and sliced crosswise
1 Honeycrisp apple, thinly sliced
1/4 cup red onion, thinly sliced
1/2 cup crumbled blue cheese
1/3 cup toasted chopped walnuts
Directions
- In small bowl, mix first six ingredients with wire whisk. Beat in oil until blended.
- Place spinach on serving platter. Top spinach with oranges, apple, and onion; sprinkle with cheese and walnuts. Drizzle vinaigrette over salad.
