Potato Chip Sausage Frittata

8 eggs, lightly beaten
1/3 cup sour cream
1/4 cup chopped fresh basil, plus more for garnish
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
4 oz (about 3 cups) kettle-style potato chips, plus more for garnish
1 tablespoon olive oil
12 oz Italian sausage
1 medium onion, thinly sliced
3 cloves garlic, finely chopped
1/4 teaspoon red pepper flakes
Directions
- Preheat the broiler to high. Set a rack in the top third of the oven.
- In a medium bowl, combine the eggs, sour cream, basil, Parmesan, salt and pepper. Whisk to combine thoroughly. Stir in potato chips and let sit for 10 minutes.
- Meanwhile, heat the oil in a 10-inch nonstick skillet over medium heat; add sausage and cook: breaking up with a spoon, for 3 minutes. Add onions and cook, stirring, for 4 to 6 minutes, until the onion is softened and sausage is cooked through. Add garlic and red pepper flakes and continue to cook, stirring, for 1 minute.
- Add the egg mixture to the hot skillet with the sausage. Stir briefly to combine. Cook, without stirring, over medium heat until the sides begin to set and bottom is lightly brown, about 3 to 5 minutes. Transfer to the broiler, and broil until the top is set but knife inserted in the middle is still slightly moist, about 3 minutes. Do not overcook. Let stand 10 minutes. Cut into wedges or small squares to serve warm or at room temperature. Garnish with crushed potato chips and chopped fresh basil.
Tip: Reheat leftovers in the microwave and, if desired, serve with your favorite marinara sauce.
