Ingredients
8 ounces rice or spaghetti noodles
1 cup shelled edamame, thawed if frozen
1 cup shredded carrots
1 red bell pepper, thinly sliced
3/4 cup Thai Peanut cooking sauce
1/4 cup cilantro, chopped
1/4 cup peanuts, chopped
Directions
- Prepare your choice of noodles according to package directions.
- In a large bowl, add cooked noodles, edamame, carrots, and pepper. Add peanut sauce and stir well.
- Divide among bowls and garnish with cilantro and peanuts.
