Roast Beef and Swiss Cheese Wraps

Ingredients
12 slices roast beef
1 (8 oz) block Crystal Farms provolone or Crystal Farms Swiss cheese
12 strips roasted red pepper
1 cup baby arugula
6 green onions
12 chives
Directions
- Cut cheese into 1/2" x 3" long pieces. Cut green onions in 3" long sections. Cut 12 strips of roasted red peppers. Lay out 12 pieces of roast beef, in each place a piece of cheese, red pepper, onion, and small handful of baby arugula. Roll up each piece of roast beef and tie a chive around bundle to secure.
