Ingredients
2 cups uncooked elbow macaroni
2 packages (5 ounces each) Ellsworth Hickory Bacon Cheddar Cheese Curds, coarsely chopped (about 2 1/2 cups)
4 fully cooked bratwurst links, halved lengthwise and sliced
1 cup diced sweet pickles
1 cup diced red onion
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon sweet pickle juice
2 teaspoons sugar
1 teaspoon hot pepper sauce
Salt to taste
Pepper to taste
Snipped fresh chives, optional
Directions
  1. Cook macaroni according to package directions; drain and rinse in cold water.
  2. Combine the macaroni, cheese curds, bratwursts, pickles and red onion in a large bowl.

Dressing:

  1. Whisk the dressing ingredients in a bowl. Season with salt and pepper to taste. Pour dressing over macaroni mixture; gently toss to coat.
  2. Cover and refrigerate for at least 1 hour or until serving.
  3. Garnish with chives if desired.
