Ingredients
2 tablespoons vegetable oil
1 cup chopped yellow onion
1 medium red bell pepper chopped (1 cup)
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 can (14.5 oz) fire-roasted diced tomatoes, undrained
1 can (15 oz) kidney beans, rinsed and drained
1 1/3 cups shredded beef
Directions
  1. In 3-quart saucepan, heat oil over medium. Add onion, bell pepper, chili powder, cumin, coriander, garlic powder and salt; cook 7–9 minutes, or until vegetables are tender.
  2. Stir in tomatoes, beans, and beef; bring to a simmer. Cook 5 minutes to combine flavors.
