Ingredients
3 boneless skinless chicken breasts
1 tablespoon Essential Everyday chili powder
2 teaspoons Essential Everyday cumin
1 yellow onion, sliced thin
1 red bell pepper, small dice
1 yellow bell pepper, small dice
1 – 29oz can Essential Everyday tomato sauce
1 – 14.5oz can Essential Everyday diced tomatoes with green chilies
2.5 cups Essential Everyday chicken broth
2-3 whole chipotle peppers in adobo
1 – 15oz can Essential Everyday black beans, drained and rinsed
1 tablespoon Essential Everyday lime juice
Directions
  1. Place the chicken breasts in the bottom of a slow cooker. Add the remaining ingredients except for the lime juice.
  2. Cook on high for 5-5 ½ hours on high (7-71/2 hours on low). Using tongs, shred the chicken breasts into chunks. Season the soup with the lime juice and additional salt and pepper if needed.
  3. Top with your choice of toppings.
