4 salmon fillets, about 4 oz each, skins on
1/4 cup white (or a combination of white and black) sesame seeds

8 oz mushrooms, stems removed and discarded, and caps cut in half
1 medium head Napa cabbage, chopped
1 cup matchstick cut carrots
1 or 2 red Fresno chiles, thinly sliced

Heat 1 tablespoon of the oil in an oven-proof large skillet over medium heat, add the salmon, skin-side up and cook for 1 to 2 minutes, until browned. Turnover and cook for another 2 minutes to crisp the skin. Transfer to the oven and cook for another 5 to 8 minutes, until cooked to desired doneness. Remove from the skillet and keep warm.
