Chinese-Style BBQ Pork Fried Rice with Smashed Cucumber Salad

Ingredients
1 pkg (16 oz) Innovasian Chinese-Style BBQ Pork Fried Rice
1 teaspoon salt
2 teaspoons sugar
2 teaspoons sesame oil
3 teaspoons soy sauce
1½ tablespoons rice vinegar
2 seedless cucumbers
4 cloves garlic, chopped
2 teaspoons chili oil
2 teaspoons toasted sesame seeds
Fresh cilantro
Directions
- In a large bowl, combine salt, sugar, sesame oil, soy sauce, and rice vinegar. Stir until the sugar and salt are dissolved. Set aside.
- On a cutting board, lay a large knife flat against the cucumber and smash lightly. Cut into small pieces.
- Toss cucumbers with dressing, garlic, and chili oil. Sprinkle with sesame seeds.
- Prepare Fried Rice per package directions and serve with cucumbers.
