Bacon Asparagus Quiche

Ingredients
1 sheet refrigerated pie dough (half of a 14-ounce box)
6 strips Hormel thick-cut bacon, cooked and coarsely chopped
1/2 lb fresh green asparagus, cut into 2-inch pieces
4 green onions, diced
1 cup white Cheddar, shredded
3 large eggs
1 1/4 cups heavy cream, half-and-half or milk
Directions
  1. Heat the oven to 375°F. Line a 9-inch pie plate with pie dough and crimp edges; chill 30 minutes. Line with foil, and fill with pie weights or dried beans. Bake until crust is set, 20 minutes. Remove foil and weights; continue baking until lightly golden, 5–10 more minutes. Allow to cool.
  2. Make the filling by combining the bacon, asparagus and scallions in a large bowl. Add the cheddar and toss to combine.
  3. Whisk 3 eggs, ½ teaspoon salt, ¼ teaspoon pepper and 1¼ cups heavy whipping cream in a large bowl. Stir in 1-2 tablespoons chopped fresh herbs if desired.
  4. Spread the veggie, meat and cheese mixture in the crust, then pour egg mixture on top. Reduce the oven temperature to 350°F and bake until the filling is set, 40–50 minutes. Let cool before slicing.
